Ingredients list for the Fried Cabbage Sausage Skillet

  • 3 tablespoonsbutter or olive oil
  • 1 smallgreen cabbage, chopped
  • 1/2onion, chopped
  • 1/2 lbsmoked sausage, sliced
  • 1 (15 ounces) candiced tomatoes, undrained (or diced fresh tomatoes)
  • 1/2 green bell pepper, diced
  • 4 teaspoon cajun seasoning
  • 3/4 cupchicken broth
  • 1/2 teaspoon salt and 1/2 teaspoon black pepper, or to taste
  • 2 scallions, sliced, for garnish
  • Lime wedges or slices, optional

Directions

1. To make the fried cabbage sausage skillet: Chop or slice the sausage, cabbage, and onion.

2. In a large non-stick skillet, cook the sliced sausage about 3 minutes until the edges start to brown and sausage renders some fat. Remove sausage from skillet and drain on paper towels if needed. Set sausage aside and wipe the skillet clean.

3. In the same skillet, melt the butter (or heat oil). Add cabbage and sliced onion and cook on medium-high for about 5 minutes, stirring regularly, until cabbage starts to wilt.

4. Add all the remaining ingredients and the pre-cooked sausage as well. Cover the skillet and cook for about 10 minutes on medium-low.

5. Remove the lid and finish cooking until cabbage is desired tenderness and most of the cooking liquid has been reduced. Serve the fried cabbage and smoked sausage immediately, garnished with lime slices and sliced scallion if you like. Enjoy!
